Ingredients

1 cup plain yogurt or mayo (can substitute with coconut or cashew yougurt)

1-2 Tbsp māla girl chili chakra

Half fresh lime, squeezed
-
2 Tbsp. Butter or Olive Oil

4 corn on the cob, shucked

Optional: Green Onions, (white and green parts, thinly sliced), ¼ cup

Optional: Fresh Cilantro, chopped, 1 Tbsp.

Optional: Cotija cheese, grated ½ cup
Directions
Place yogurt or mayo in a small mixing bowl, set aside.
Heat medium size saute pan over medium heat. Add in butter or olive oil.
Shuck corn off the cob and sauté for 1-2 minutes over medium heat
Season with 2 packets or 2 Tbsp.of chili chakra and squeeze of lime. Stir and remove from heat.
Pour sauteed corn into yogurt or mayo base. Add in sliced green onions, cilantro and cotija cheese.
Like it extra spicy? Add minced jalapeno or serrano peppers.
Grab your chips and dive in.

For those just trying to be a little healthier, start with 50/50 ratio of yogurt and mayo;)
Fresh corn makes this SPECTACULAR, but frozen can also be delicious when you're craving this out of season.
