ALMOST WEDDING SOUP

We went a little extra and used leeks and fennel for this recipe, the licorice/anise like flavor in fennel is special than typical celery, but if you don't have it, celery still works great. We went for chopped kale for the greens, but a hearty escarole or even shredded collards could work too. If you only have spinach as your greens option, just add it at the end as it breaks down quicker than a heartier green.

Ingredients:

Olive oil, 2 Tbsp.

Leeks, sliced, ⅓ cup

Fennel, diced or sliced, ⅓ cup

Carrots, diced or sliced, ⅓cup

Kale, shredded, 1 cup

Chili Chakra, ½ tsp.

Orzo, dry, ⅓ cup
-
Soulfull Classic, 2 Tbsp.

Water, 2 -2 ½ cups
-
Northern White Beans, cooked and drained, ½ cup

Preparation Method:
Heat saucepot over medium heat.
Add olive oil and swirl around pan.
Add in leeks, fennel, carrots. Saute for 1-2 minutes.
Add in kale, orzo and chili chakra to season veggies.
Next up, soulfull classic. Stir and add in water.
Stir again and bring to a simmer.
Reduce heat to low and simmer for 8-10 minutes. Add in cooked northern white beans.
Remove from heat and serve away!
One might say, "thats alot of ingredients for an easy soup". Fair, you can easily omit the leeks, carrots and fennel and just add in more kale.
