Lentil Bolognese

We took the classic bolognese flavor route, and used mushroom brainiac for the instantly elevated meaty richness.

Ingredients:

Water, 2 cups

Mushroom Brainiac, 2-3 Tbsp.

Red Lentils, 1 cup

Marinara Sauce, we used Michaels from Brooklyn, 1 qt.

Optional; Spaghetti squash

Fresh Basil, chopped, ¼ cup

Preparation Method:
Heat water in a stock pot and bring to a simmer.
Add in mushroom brainiac and lentils. Stir to combine.
Add in 1 qt. of marinara sauce, stir again, and bring to a simmer.
Reduce heat to low, cover and simmer for 10- 15 minutes or until lentils are cooked and softened.
Garnish with fresh basil and serve.
We took a shortcut with a premed marinara sauce. If you only have tomato sauce on hand, there are a few options. Simply add 2 Tbsp. of mushroom brainiac per qt. of tomato sauce or, if you have the time, start by sautéing garlic, onions, and chopped mushrooms in olive oil with salt and crushed red pepper before adding in mushroom brainiac and water.
