Cauli-Power Chicken-Less Chili
This recipe is inspired by: operation clean out the fridge and mixed with a little inspiration for Taco Tuesday. Did you know that if you buy a head of cauliflower, you can probably make up to 5 different Māla Girl recipes for 2?! It's true! cauliflower can go a long way! I've swapped out ground meat for finely chopped cauliflower (thank you cuisinart food processor!) With the P.S. Flavor! Adobo Kitchen Blend to season my "ground meat", this dish came together within 30 minutes.
Our recipes are here to inspire you! For those who don't like cauliflower, I have an inside tip: with all the flavors going on in this chili, onions, peppers, beans and tomatoes, they won't even know theres cauliflower in it ... unless you let them know. :)
Another fun tip ... if you like a good chili, feel free to use any of your favorite veggies or beans in this and it is sure to please!

CAULI POWER CHICKNLESS CHILI
Māla Bowls - Simply Simmered
Yes, cauliflower power is the inspiration for this chili, but I assure you it will not disappoint.
This recipe was initially designed to feature Soulfull Classic as the "chicken less chicken broth" for this chili, however as I was making it, Mushroom Brainiac felt she deserved to share in the spotlight to help bring richness and a "meaty" depth element.
It was the right choice indeed! Enjoy this!
Olive oIl, 1/4 cup
Yellow Onions, diced, 2 cups, 9 oz. wt.
Cauliflower, 2 1/2 cups, 9 oz. wt.
Green Bell Pepper, 1 1/2 cups, 6 oz. wt.
Garlic Cloves, peeled, 7, or, .8 oz. wt.
Red Jalapeño, small, .4 oz .wt.
*White Beans, 1 1/4 cups
*ours were leftovers that were cooked in Mystic Maca
P.S. Flavor Adobo Spice, 3 Tbsp.
Sparkle Salt, 1/2 tsp.
Tomatoes, chopped, in juice (we use Pomi), 1 cup
Water, 1 cup
Soulfull Classic Broth Mix, 1 Tbsp.
Mushroom Brainiac Broth Mix, 1 Tbsp.
Pulse cauliflower in food processor until its rice consistency or minced.
Scrape out of bowl and place on a prep plate. Add in garlic cloves and red jalapeño. Blend until minced and scrape out of food processor.
Heat cast-iron pan or large sauce pot over medium high heat.
Add 1/4 cup olive oil, peppers and onions.
Season with 1 1/2 Tbsp. of p.s. flavor adobo spice. Cook for 2 minutes and add in garlic, minced jalapeños, cauliflower and remaining 1 1/2 Tbsp. of adobo spice. Continue cooking 2 minutes.
Add in chopped tomatoes, white beans, water, soulfull classic and mushroom brainiac mix. Stir to combine and bring to a simmer.
Continue cooking for 10 minutes until mix begins to thicken slightly and shut off heat.
Ladle 2 cups into 3 bowls.
Drizzle with cashew crema and finish with desired toppings.
We chose fresh cilantro, avocado and crushed tortilla chips.
