We're not sure if it's her island style vibes, but cosmic curry is having a moment right now. She's crafted with 23 ingredients, and you simply activate with hot liquid. For this one, we chose to heat a tablespoon of coconut oil to activate her flavor, but you can also use hot water instead.

Part fruity, part savory and low key full of nutrients. This salad packs in 2 cups of veggies and fruit per serving.
Ingredients

Coconut Oil (could also use water), 1 Tbsp.

Cosmic Curry, 1 Tbsp. or packet

Plain Yogurt, unsweetened, 1 cup

Celery, diced, 1 cup

Gala Apples, diced, ½ cup

Carrots, shredded or diced, ½ cup

Red Grapes, ½ cup
-
*Optional, Fresh Mangos,¼ cup
-
*Optional, Fresh Cilantro, 2 Tbsp.

Baby Arugula, 4 cups

Fireball Toasted Walnuts, ½ cup
Directions
Heat a small saucepan over medium heat.
Add 1 Tbsp. of coconut oil, and whisk in 1 Tbsp. cosmic curry. Remove from heat.
Place yogurt in a bowl and whisk in cosmic curry oil.
Fold in remaining ingredients, except for arugula and walnuts.
Divide arugula evenly into 2 bowls.
Divide cosmic Waldorf salad onto each and top with fireball toasted walnuts.
