Looking for a surprisingly simple and delightful pasta? This would be the one! We've simply added in our soulfull classic broth mix with some tomato paste, water and cashew butter for creaminess. Stir it up and plate it up! Veggie choice is up for grabs here, but here's what we had that night: zucchini, roasted peppers, onions, sliced baby bella mushrooms and a little garlic. Chickpeas and cashew butter are added in for an extra pop of protein. Are you trying to cut out carbs? You may want to reconsider ... a serving of pasta can also contain an additional 10 grams of protein;)
The trick to getting dinner on the table in under 30 minutes is getting that pasta water boiling! You know what they say..."a watched pot never boils". Don't watch it ... slice up some veggies instead!
