SOULFULL PASTA PRIMAVERA

What is pasta primavera? Quite simply a pasta dish with lightly sauteed veggies. Why not love them up with a soulfull classic sauce? Enjoy!

Ingredients:

Pasta of choice, 1 cup (we use barilla)

Baby Bella Mushrooms, sliced, 1/2 cup

Zucchini, sliced into half moons, 1/2 cup

Yellow or Red Onions, thinly sliced, 1/2 cup
-
Roasted Bell Peppers, sliced, 1/2 cup
-
Chickpeas, drained, 1/2 cup
-
Sparkle Salt, 1/2 tsp.

Olive Oil, 2-3 Tbsp.
-
Fresh Garlic, minced, 1/2 Tbsp.

Soulfull Classic Broth Mix , 1 Tbsp.
-
Almond Base, Joi, 2 Tbsp.

Pasta Water, 1 cup
-
Tomato Paste, 1/2 Tbsp. (we use pomi)

Preparation Method:
Grab a saucepot and get some water boiling for pasta of your choice (linguine, spaghetti, penne...you get the idea).
While your water is boiling, slice up your veggies if you haven't already.
When water is boiling add in your pasta and cook according to package directions.
While your pasta is cooking, get a large saute pan and heat it to medium high heat.
Add in 2 Tbsp. olive oil, minced garlic and veggies. Season veggies with sparkle salt and saute for 2-3 minutes.
Add in 1/2 Tbsp. tomato paste, 1 Tbsp. soulfull classic, 2 Tbsp. almond butter and 1 cup pasta water.
Stir it up and bring it to a simmmer.
Drain your pasta and toss it in the saute pan.
Stir it up and plate it up!.
Garnish away with fresh herbs at the end.
