COLD NOODLE SALAD WITH CHILI CHAKRA PUMPKIN DRESSING

Ingredients:
FOR THE DRESSING:

Olive oil, 2 Tbsp.

Organic Canned Pumpkin, ½ cup

Chili Chakra, 1 Tbsp.

Fresh Orange Juice, ½ cup
-
Optional: 1 Tbsp. sweetener
FOR THE NOODLE SALAD

Ramen noodles, cooked and chilled (we used Lotus Foods), 2 packs,

Chopped Kale, 2 cups
-
Pepitas, 1 cup
-
Fresh Pineapple, chopped, ½ cup
-
Shredded Carrots, 1 cup

Preparation Method:
To make the ramen noodles, here’s what we do:
Place noodles in a ceramic or metal bowl. Bring 3-4 cups water to a boil and pour over noodles just until they’re covered. Top the bowl with a plate and let them cook on there own for 5 minutes. Drain, rinse and cool.
To make the dressing:
Bring a small saucepan to medium heat.
Add olive, oil, pumpkin and chili charka superpowder. Saute for 1 minute.
Shut off heat and whisk in orange juice. Set aside to cool slightly.
Place kale, pineapple, pepitas and carrots together in a mixing bowl and toss together with 2 oz. of dressing.
Divide remaining dressing into 4 each 8 oz. mason jars.
Divide kale salad into the base of each mason jar (a little over ½ cup per jar.
Divide ramen noodles evenly over each salad.
Cover with lid and store in the refrigerator for up to 2 days.
If you want to save a step, you can skip mixing the kale salad and simply divide all of the ingredients over the dressing (place kale in first so it can start to break down with the dressing:)
