Cosmic Broccoli Mac and Cheese

Did you know Mac and cheese could be full of immunity boosting flavor? If you use māla girl it can. Flavor choices are endless here. We were in a cosmic curry kinda vibe when we first made this, however, all of the girls deserve a chance in this recipe, especially chili chakra.

Ingredients:

For the cheese sauce (aka our 3 ingredient queso recipe):

Water, ½ cup

Cosmic Curry Powder, 1 Tbsp or packet.

Vegan Shredded Cheddar Cheese, (we used Violife), 1 cup

Everything Else:

Pasta, 1 ½ cups

Broccoli, chopped, 1 cup

Red Bell Peppers, sliced, ½ cup

Baby Bella Mushrooms, sliced, ½ cup

Olive oil 1 Tbsp.

Sparkle Salt, ¼ tsp.

Preparation Method:
1. Preheat oven to 400F. Heat water in a small saucepot and bring to a boil.
Season ¼ size sheet pan with olive oil, add broccoli, peppers and mushrooms. Season with sparkle salt and place in oven.
- 3. Add pasta to water and cook until al dente, approx. 8 minutes.
4. While pasta is cooking and veggies are roasting, heat ½ cup water in a small saucepot and bring to a boil.
Whisk in cosmic curry and shredded vegan cheese. Reduce heat to low and whisk until melted (approx. 2 minutes). Set aside.
6. Remove veggies from oven after approx. 8 minutes and set aside.
7. Drain pasta from water and pour in cosmic curry queso and roasted veggies.
8. Stir and serve!
If you don't have any veggies or protein to add into this, don't stress! At least you added something healthy to a classic Mac and cheese. Love it up as is!
