MORINGA SOFRITO MUSSELS

If you're looking for a quick lunch or dinner, we highly recommend you consider making this recipe in the near future! You can serve this with some nice hot bread to soak up the sauce with or serve it with rice or pasta. We gave the spotlight to miracle moringa, but cosmic curry would not be offended to be in this party. Choice is yours!

Ingredients:

Green Pepper Sofrito, see recipe, 1/4 cup

Coconut Milk or water, 1 cup

Miracle Moringa Broth Mix

Mussels, fresh, cleaned, 3/4 lb.

Preparation Method:
Prep up green pepper sofrito.
Heat 1 cup of coconut milk or water in medium size sauté pan over high heat. Bring to a simmer and whisk in 1 Tbsp. of miracle moringa broth mix, 1/4 cup green pepper sofrito and mussels.
Close with lid and reduce heat to medium for 3-5 minutes. Remove lid and continue cooking until mussels have opened. Discard any unopened mussels.
Serve with a side of pasta, rice or bread for dipping!
