CURRY CAULIFLOWER HUMMUS

Ingredients:

Cauliflower, chopped, 2 cups

Water, 3/4 cup

Cosmic Curry Blend, 4 Tbsp.

Optional: Red Jalapeno, 1/4 piece
-
Olive Oil, 2 Tbsp.

JOI Organic Almond Base
-
Fresh Lime Juice, 2 Tbsp.
-
1 can chickpeas, drained and rinsed, or (1 1/2 cups)

Sparkle Salt, 1/2 tsp.
Preparation Method:
Bring water to a boil in a small saucepot.
Add cauliflower, cover and simmer for 10 minutes or until softened.
Remove from heat.
Place cauliflower and water in food processor.
Add all remaining ingredients and blend until smooth.
Feeling fancy?
Garnish with a little extra olive oil and sliced almonds.
Serve with crudite and chips.
This recipe can also be used with Soom tahini, but love to switch it up with Joi almond every once in a while.

A base spread for a flatbread, last minute way to make a quick sauce, simply whisk it in with some hot water!
