What's the secret to making mussels...BROTH! Today we've used miracle moringa for these yummy mollusks, although cosmic curry would take a close 2nd place!
If you're not a fan of seafood, then adding your favorite precooked bean can work just as well in this dish!
If you're looking for a quick lunch or dinner, we highly recommend you consider making this recipe in the near future! You can serve this with some nice hot bread to soak up the sauce with or serve it with rice or pasta. Choice is yours!
Heat 1 cup of coconut milk or water in medium size sauté pan over high heat. Bring to a simmer and whisk in 1 Tbsp. of miracle moringa broth mix, 1/4 cup green pepper sofrito and mussels.
Close with lid and reduce heat to medium for 3-5 minutes. Remove lid and continue cooking until mussels have opened. Discard any unopened mussels.
Serve with a side of pasta, rice or bread for dipping!
