Have you had the famous breakfast chicken and waffles? We've flipped the flavor (no pun intended) and put the "chicken" in the waffle batter, using Mala Girl Soulfull Classic.
Typically drizzled with maple syrup, we gave her an immunity spicy kick and blended it with Mala Girl fireball basil.
Where's the protein you ask? Don't forget flours are a good source of protein. We also added in chopped almonds and hemp seeds for an extra dose to make this a true complete meal.
This savory waffle batter is pretty simple to make. Oil in this recipe is the key to the crispiness. This recipe uses chopped almonds and hemp seeds, but can also easily handle thinly sliced or shredded veggies as well.
Ingredients
Flour (we used all purpose), 1cup
Baking Powder, 1/2 Tbsp.
Pasture Raised Eggs, 2 each (can also use egg replacer such as chia seeds with water)
Whisk flour, baking powder, eggs, oil, water, and māla girl together in a mixing bowl. Whisk until evenly combined.
Pour one cup of batter into heated waffle iron, and close.
Flip and cook until ready light comes on. If you like it a little crispier, let it go for one more cycle.
Remove from waffle iron and set aside.
Pour in remaining batter and repeat cooking process.
While the last waffle is cooking, get a microwave safe bowl and heat 1/2 cup pure maple syrup.
Whisk in 1/2 Tbsp. māla girl fireball basil mix.
Place waffles on plates and drizzle with fireball basil maple syrup.

Recipe Note
We used eggs for this recipe. If you want to make it vegan, try using 2 tsp. chia seeds soaked in 1/2 cup water.
Looking for more protein? We used all purpose flour, but you can easily modify this with a blend of chickpea flour or substituting 1/2 of the flour with oats.
